Patat oorlog: French fries with onions, mayonnaise and satay sauce

Ketchup or Mayo? There's just no good reason why you should limit yourself to these two basics. The Dutch know this too and rely on a stunning mix of mayonnaise, fresh onions and satay sauce for “Patat oorlog”.

 

Preparation steps

Peel the garlic for the satay sauce. Put the rest of the ingredients in a blender and puree to a smooth mass. Pour the mixture into a saucepan and bring to a simmer over medium heat, stirring constantly. Take the pot off the stove and stir for another 2 minutes.
Separate the egg whites and yolks for the mayonnaise. Put the egg yolks with mustard and lemon juice in a small blender jug. Press the hand blender on the bottom of the blender jug, have the oil ready. Puree the ingredients at the highest level, gradually adding oil until the ingredients combine to form mayonnaise. Season to taste with salt and pepper.
Fry the French fries until golden brown according to the instructions on the packet and degrease on kitchen paper. Peel onions and cut them into fine pieces. Top the fries with mayonnaise and satay sauce and sprinkle with onions.
