Storing asparagus - how long does asparagus keep?
During the asparagus season, we can hardly get enough of the delicious vegetables and we usually buy asparagus stalks for several days. Or we buy really fresh asparagus on the market and don't want to try a delicious asparagus recipe until a few days later. How do we properly store asparagus? How are the vegetables stored so that they stay fresh and taste good for as long as possible?
Store asparagus properly and keep it fresh for a long time
The shelf life of asparagus naturally depends on how fresh the asparagus was when it was bought. Only what could be bought fresh can be kept fresh.
The good news first: Asparagus is not a very sensitive vegetable, the stalks do not go bad that quickly. However, asparagus must be stored properly, otherwise it will dry out or the ends will mold. But what is the best way to store asparagus?
Keep asparagus fresh
Remove the asparagus from the packaging after purchase. Usually there are cuffs at the bottom to hide the ends. Now take a clean cotton tea towel, wet it with cold water and wring it out. It should still be well damp. Now place the asparagus on the damp cloth and wrap it. The asparagus wrapped in this way finds its place in the vegetable compartment of the refrigerator.
Asparagus in the refrigerator
The asparagus can be kept fresh for three to four days if it is wrapped in the refrigerator when it is damp. Every now and then test whether the cloth is still damp enough.
When storing in the refrigerator, it is very important that there are no fruits or vegetables in the compartment that have a very intense smell, as the smell can pass onto the asparagus. Strawberries in particular, but also onions (which actually have hardly lost anything in the refrigerator), can lead to a loss of taste in asparagus.

Keep peeled asparagus
Peeled asparagus can also be stored wrapped in a damp cloth, but the shelf life is very limited because the protective peel has been removed. Peeled asparagus simply spoils too quickly. But there is nothing wrong with peeling the asparagus one or two hours before cooking and keeping it fresh. If you want to keep peeled asparagus longer, it is better to wrap the stalks in plastic wrap or put them in a freezer bag. No additional water should be added to the bag! But even then, the shelf life is very limited. Peeled asparagus should be eaten the next day at the latest.

Store green asparagus properly
Green asparagus appears to be more robust than white asparagus, but it requires almost more attention when it is stored. It would be ideal if green asparagus is stored upright with its ends in cold water. Almost like a bouquet of flowers. The heads should be covered, however, and the bunch of green asparagus should be kept in a dark, cool place. Green asparagus will keep for three to four days if you take care of it.
Mistakes when storing asparagus?
- The main mistake is probably to store the asparagus as it was bought. It is really worth removing it from the plastic packaging and banderole and lifting it into a damp tea towel. The next mistake is not being consistent when it's moldy. This can even have happened to asparagus you just bought and which you couldn't see under the sleeve of the asparagus ends. For health reasons, you should definitely dispose of such asparagus.
- If the asparagus is then stored in the vegetable compartment, it should almost be a guest there. Because asparagus contains a lot of water and as a result likes to attract odors. And who likes asparagus that tastes intensely like onions? Strawberries sounds like a better taste idea, but maybe you should try a delicious strawberry and asparagus recipe.
- Asparagus should also not be stored in water. The asparagus remains really crunchy, but the taste is lost to the water. The asparagus is so draining. However, water can easily revive dried out asparagus.
- Peeled asparagus should not be stored for long, 24 hours in the vegetable drawer in a damp cloth is really the maximum. Anyone who does not manage to plaster the king vegetables during this time should freeze them right away.

It is of little use that it still looks fresh and crisp.

When is asparagus bad?
Mold can form on the asparagus, especially if the packaging is not removed. Under the plastic band there are not only dried out and woody ends, but often also mold. Now one would be tempted to simply cut off the mold, also generously and still eat the asparagus.
But unfortunately, it's healthier and better to throw away moldy asparagus. This applies to both green and white asparagus. There are foods in which it is sufficient to simply cut off the mold and consume the rest of the mold-free, but since asparagus mainly consists of water, the mold has usually already spread invisibly in the asparagus. The asparagus should therefore be disposed of. Unfortunately, mold toxins are not destroyed by cooking.

Can asparagus be in the fridge?
Asparagus should not only be kept in the refrigerator, white asparagus should preferably be stored in the refrigerator so that it lasts longer and stays fresh. Green asparagus can also be stored outside the refrigerator, but if you don't have a cool, dry place where the green asparagus can wait to be prepared in a glass of water, you can store it in the refrigerator in the vegetable drawer, just like white asparagus.
Can asparagus also be frozen?
Anyone who has bought too much asparagus can also freeze this vegetable. To do this, white asparagus must be peeled, so it can then be processed further in the frozen state. It is best to freeze white and green asparagus in portions. Later it is simply processed without thawing, for example when cooking asparagus. When frozen, white and green asparagus can be kept for up to six months. This is an excellent way to shorten the waiting time for the next asparagus season with your own asparagus and, if you do not freeze until June, enjoy asparagus from the freezer for Christmas. Good asparagus keeps fresher longer
Asparagus lasts longer if it is bought fresh. Whether it's fresh can be seen at the ends, for example. Under no circumstances should these be dried out.
