Lemon cake: recipe and tips

  1. Preheat the oven to 180 degrees and line a baking sheet with parchment paper. Wash the lemons with hot water, pat dry and finely grate the lemon peel. Then squeeze the lemons.
  2. In a bowl, beat the eggs and sugar until frothy. Sift in the flour and baking powder and mix in the vanilla sugar. Stir alternately with the margarine into the egg and sugar mixture. Add the lemon peel. Place on the baking sheet and smooth out. Bake in the middle of the oven for 20 minutes.
  3. For the icing, stir in the powdered sugar and lemon juice until smooth. Take the cake out of the oven and prick it with a fork while it is still warm. Spread the glaze on the cake and let it cool down.
